Instructions for Phyllo Dough Cinnamon Rolls

This Phyllo Dough Cinnamon Roll is so easy I don't understand why it isn't more common place to see this version at the brunch table versus the traditional pillowy one! Have you ever hosted a brunch?! Eggs cook so incredibly fast, how is there even time for all the steps of a traditional cinnamon roll ?? Perhaps you've discovered this recipe because your looking for an easier cinnamon roll... or perhaps you've stumbled here wondering , "What to do with phyllo dough?" Either way, this recipe covers both of those. I am sort of a cinnamon super fan over here and I can confidently say I like this crunchy Phyllo Dough Cinnamon Roll better anyway !

Cinnamon and brown sugar rolled pastries on a white plate, featuring golden brown, crispy layers of phyllo dough. Bright kitchen setting conveys warmth.

Phyllo dough, brown sugar, cinnamon and butter. That's it. All you'll need to make this crunchy flaky breakfast dessert. I told you it was simple didn't I?!

Phyllo dough layered with brown sugar and cinnamon on a beige countertop. White bowl with spoon and plate with red basting brush in background. Warm, baking setup.

Starting with 4 sheets of phyllo dough, butter each sheet and stack them on top of each other. combine your brown sugar and cinnamon in a small bowl. Add half of this mixture to the top of your 4th sheet of phyllo dough.

Sliced phyllo dough rolls in a on a beige countertop next to a shiny knife. The rolls have a spiral, pinwheel pattern and crumbs are scattered around.

Add 4 more layers of phyllo dough, buttering in between each sheet. and top off with the rest of the brown sugar cinnamon mixture. Roll the whole thing up, and slice it into 2 " sections.

Baking tray with six rolled phyllo dough cinnamon rolls in compartments on a kitchen counter. Light and shadow play across the surface.

Bake at 350°F for 20 minutes in a muffin pan. Remove from the pan immediately and let fully cool before icing.

Tools You'll Need

  • Small Bowl - I love these shatter proof bowls, the bright white helps food POP with color

  • Measuring Spoons - Get that gold girly aesthetic with these measuring spoons. They are so classy and pair well with many kitchen colors like blue, green, or purple!

  • Muffin Pan - I opt for steel bakeware for easy cleaning and long lifespan

  • Basting Brush - For the longest time I just drizzled on whatever I was supposed to be basting on. I've learned an easy to clean silicone basting brush won't waste your drizzle and you can apply it into every nook and cranny for ultimate crispiness

Phyllo Dough Cinnamon Roll Variations

I love a recipe that help's you use what you got! Here are a few variations for a slightly different dessert - but still brings that cinnamon roll vibe!
